Bacon Cheeseburger Meatloaf
2lbs ground meat 1/2 cup onion
3/4 cups bread crumbs 2 eggs, beaten
1 t black pepper 1 1/2 cups shredded cheese
I do not usually measure carefully on meatloaf and I always use 1lb of beef and 1lb of ground deer. It keeps the meatloaf lean and adds to the taste. Preheat oven to 350º. Mix meat, bread crumbs, onion, eggs and pepper. Put 2/3s of meat in loaf pan. Make a well down the center of the meat then put 1 cup cheese into the well. Cover with remaining meat, press sides to make a seal. Layer bacon slices, overlapping slightly, over top of meatloaf. Bake 50 minutes, remove drain , cover with remaining cheese and bake until melted.
