Chicken and Rice Casserole
I have used an easy Chicken and Rice Casserole for years but this one’s rice is better.
Chicken, cut up ( I use breast strips) 4 T margarine
1 cup uncooked rice
1 can cream of mushroom soup
1 pkg brown gravy mix 1-1/2 cans water
Melt margarine, add rice, gravy mix, soup and water. Mix. Pour into buttered 9x13 dish. Add seasoned chicken and cover tightly with foil. Bake at 375° for one hour or until rice is done and chicken is tender.
It takes more than 1 cup of rice for my family, remember for 1 cup of rice you must use 2 cups of liquid. No other changes are necessary to the recipe when you increase the rice.
